A Quiet Revolution

Since opening in November 2023, The Grasshopper Bar has been quietly redefining the Manila cocktail scene. Led by award-winning bartenders Kenneth Bandivas, Abby Quilal-lan, and Lester Ligon, alongside owners Marc and Tiffany Sy, we take classic cocktails and reinvent them with a distinctly Filipino twist.

Replace lime with green mango. Rim the glass with rare regional salt. Introduce ingredients like sakurab and tuba vinegar. Every drink celebrates the richness of Filipino produce.

A spicy Margarita with guava leaf, tequila, carrot juice, lime-agave, and pickled jalapeño, served in a glass rimmed with rare Tultul salt from Guimaras Island.
